The last couple times I cooked a roast it was overdone, but this time I got it just as I like it. Now if only I could carve a roast all fancy-pretty.
The rub was ground pepper, salt, 2 bay leaves, garlic cloves, thyme, and rosemary. Stir in oil then rub paste all over roast. Let stand at room temperature 1 hour.
Preheat oven to 450°F. Roast beef in middle of oven 20 minutes. Reduce temperature to 350°F and roast until a thermometer inserted into center of meat registers 150°F (about 1.5 to 2 hours). Transfer beef to a large platter and let stand, uncovered, 25 minutes. (Meat will continue to cook, reaching about 160°F for medium.)
Tollgate at Coventry a fine Art deco Pub (15)
We went for a meal here last Sunday. On entering the Pub i was not expecting too much. After we settled down i went to the bar and paid for my Carvery and some drinks. I got my Carvery, and was pleasantly surprised, all the food was cooked to perfection, and was the right temperature.
