We got these huge dried shiitake mushrooms from Hanoi that were bigger than my palm, and as thick as my hand. They also had a nice fragrance and smooth texture when cooked. We stewed these with some dried oysters, added mustard greens and cooked until they were tender. The mustard greens added some sweetness and also a bitter tang, to balance out the richness of the dried oysters.

I enjoy mashed potatoes so much more when parsnips or turnips are mixed in. And of course, the garlic!


* 2 pounds (2-inch) peeled cubed potatoes
* 2 cups (2-inch) peeled cubed parsnip
* 4 garlic cloves
* 3/4 cup milk
* 1/4 cup butter
* 2 tablespoons minced fresh chives
* 3/4 teaspoon kosher salt
* 1/4 teaspoon fresh ground black pepper


Combine potatoes, parsnips, and garlic in a large saucepan; add water to cover. Bring to a boil; cook 20 minutes or until vegetables are tender. Drain. Heat milk and butter in microwave until butter is melted. Add to vegetables. Beat with mixer at medium speed until fairly smooth, according to personal preference. Add salt and pepper toward end of beating, then stir in chives. This recipe is also very good with turnips instead of parsnips.

Chop up one potato into triangular pieces.
Put in a bowl and add 2 tablespoons of water.
Cover with saran wrap.
Microwave on high 3 minutes. Take the potatoes out of the microwave and drain out the excess water.
Now season the potatoes liberally with Tony Chachere's Cajun Spice.
Heat up your cast iron skillet on medium heat.
Add some toasted sesame oil and add 1/3 cup chopped onion.
If you feel like it, cook the onion for 2 minutes before adding the potatoes.
Lower the heat to low and add your seasoned potatoes, and mix the potatoes and onions a few seconds. Add some canola oil (3-4 tbl) and let those puppies cook. Don't try to mix them too much or anything. Just cook them on low heat, flipping once until both sides are nice and golden.

2nd Day in India

Old Delhi

Once we found Karim's we were rather taken aback by the seating. It was clearly very popular and the wipe clean tables in the fluorescently lit rooms gave the character of an Indian transport caff, rather than a world famous restaurant. The kitchens were in the courtyard outside and the menu was on a large noticeboard on the wall. Nobody dared to order the brain curry. The cooks were making the breads and barbequeuing the food right as we walked past. All very interesting and the smells were delicious.

Not being too sure about all this, we all ordered lamb dishes, chicken Korma, etc. They were quick to arrive and we found that we had no knives and forks. We had to eat using the traditional method of tearing a corner of nan bread and scooping the food up on that.

Was it worth the trip? You bet it was! The food was simply delicious, plentiful and we had clearly over ordered. The Badam Pasanda was melt in the mouth.

I can see why the guidebooks rave over this place. A true and hidden gem!

Gas is kept in a cylinder under the stove top. In most homes I have been in, the cylinder is not in a covered space. This being in a 'cupboard' makes it look more 'sophisticated'. (Not the right word I want to use...) Gas connections are not like in US, but cylinders are delivered on a regular basis; empty ones exchanged for full ones.

Gas stoves and cooking is the most popular form of cooking. Electric ranges are in India, but not as popular as gas. This is mostly because Indian cooking tastes better done on a gas stove.
